In-conversion means that the almond crop hasn’t been sprayed, however the farm is undertaking the required time for the soil to be rested for a number of years in order to be certified organic/biodynamic (it’s a long road for these farmers, and this is a way they can still sell their yield in the process). These Australian almonds are sourced from a number of local growers depending on availability.

If you're wondering what to do with a bunch of almonds, why not roast a few and add them to a grazing board, or whizz them up into a delicious roasted almond butter, which can then be wedged into medjool dates for a nutritious little treat (yep we sell dates too). You can also make your own almond milk these days (flavoured with a bit of vanilla essence, maple syrup and sea salt), the leftover pulp can be used to make a decadent gluten free Torta Caprese - Emiko Davies has a mean recipe... Almonds also star in the Minimalist Baker's extremely addictive 5 Ingredient granola bars, highly recommend.

Best to store in an airtight container in a cool, dry place away from direct sunlight. You might even want to keep them in the fridge. They should last for up to 12 months if stored correctly. See best before date.
